How simple you ask? four eggs, 1/2 cup of freshly squeezed lemons, a table spoon of calcium carbonate, salt & pepper to taste. No blender necessary if you whip vigorously as me by hand until ingredients are airy and slowly pour into simmering broth add chicken and rice if desired. Here we used a stock made from a tomahawk steak bone already richly seasoned. Drizzle olive oil and voila your avgolemono at your command in minutes. I even make this in the morning for a prepared lunch so long as the broth is available and deliciously seasoned. This is a weekly if not twice a week staple for us. Καλή όρεξη.
